India
  • Ras Malai -  Name comes from two parts in Hindi: Ras, which means Juice/Juicy, and Malai, which means cream. It consists of sugary white, cream or yellow colored balls (or flattened balls) of Paneer(fresh cheese) soaked in malai (clotted cream) flavored with shredded cardamom. The best ones made will just melt in your mouth as you hastily try them out after a sumptuous meal.

  • Rasgulla (also called Rosogulla) - Called as the precursor of Ras Malai, and originated in the Indian state of Orissa, its a dish made from ball shaped dumplings of chhena (an Indian cottage cheese) and semolina dough, cooked in light syrup made of sugar. This is done until the syrup permeates the dumplings.
